I get callousses from lifting so try and wear gloves now - they really do make a difference.

Leave her be, she is just getting used to her new home. Is she eating? I would think about putting her food and litter tray near to her hiding place. As she goes her confidence gradually move them to where they would normally be. And give her lots of fuss when she does venture out.

I would also stick to using one set of scales. The different ones won't all be calibrated the same (and might not all be accurate) but at least if you stick to using just one set you can track your progress in how much you've lost

I've also made a stir through sauce with some greek yoghurt, tomato puree, cumin or whatever spices I fancy!

My tip would be to make sure you are 100% honest in logging. Don't over estimate calories burnt and under estimate calories consumed.
