That's crazy! I fractured my foot about 4 weeks ago!!! I stuck to a meal plan, logged everything, and with no exercise actually lost 2 lbs this week. I think the secret was very low simple carbs and refined sugar. Considering I went on a cheesecake factory cheesecake binge the week prior. LOL

OOOOO......Daiya cheese, Veganaise, and TOFU scramble for substitutes. Yummmm. lol. Also, instead of organic butter, or nasty and dangerous margarine, we use the organic earth balance buttery spread. DEEEELISH!

I cut in half, bake covered in foil for 40 mins, then scoop out and serve however you like it. I also bake it, and throw it in a stock pot with veggie broth, coconut milk, juice of one orange, and then use an electric mixer, or throw in a blender, to smooth out. Makes a really delicious soup!

for an even healthier version, I'd use veggie broth, and tofutti cream 'cheese'. That way there's no saturated fat or cholesterol. (im vegan) i absolutely love love LOVE butternut squash, but never thought of adding the cream cheese part. THIS I WILL TRY!

I puree squash either by throwing it in my Blendtec blender, or using electric beaters in a stock pot ;-) In the Blendtec, I don't even have to cook it first!

OMG YOU CAN DO IT! I am 5'7 and this January I weighed 165! I was recovering from a torn ligament in my groin and then I broke my arm. LOL. I hit stop when I'm done......but if I know I didn't put as much effort into my workout, I cheat and wait a few minutes till I feel cooled down completely. LOL. Just being honest. The problem with that is that I forget to hit stop. HA! In any case.....both ways are accurate in my opinion.

It is impossible to literally gain 1lb of FAT overnight (3500 calories). Weight gain could be a result of food, water, muscle.....weigh yourself in the morning once a week before you eat or drink anything. I used to be a scale *kitten* and it drove me nuts. LOL. I would be 162.4 in the AM and then 166.7 at night.
