I have Wel Fed and Paleo Comfort Foods. Love love love Well Fed and have made so many of the dishes including homemade mayo.. it turned out great and had Pad Thai last night! I've been so busy with Well Fed that I haven't tried anything out of Comfort Foods yet!

Just had tuna for lunch. I whip out the food processor throw in some red, orange bell pepper, red onion, fresh ginger and a bunch of cilantro with two cans of tuna. Top it off with a couple teaspoons of apple cider vinegar. Yum!

Bake just like a potato cut open scoop out the inside and top with coconut oil (unrefined, extra virgin) and cinnamon. They can be refrigerated after cooking until you are ready to just pop them in the microwave. They are packed with nutrition so experiment away!

Look for the "unrefined" extra virgin. Extra virgin meaning the first press and more nutritious. There are some cheaper brands that are used for deep frying. "So Delicious" has coconut milk by the carton in the dairy case of some groceries. If you get the unflavored, unsweetened it is only 50 kcals a cup. So good in green smoothies. I pour it into ice trays and make coconut ice cubes for my smoothies!
