Brine over night. Pound flat so it cooks quicker and more evenly. Season with fresh ground pepper or whatever you like. Pan fry in a little oil or none if you have a well seasoned cast iron pan. Use in sandwiches, salads, or serve with sauce of your choice.

I second the strength training. Try biking and running on the elliptical instead of the treadmill; less impact on the knees. And icing the knee after workouts. I've had a multitude of joint injuries from tennis and the icing helps a lot. I recommend and old fashioned ice bag (Walmart $7) since they don't drip condensation.

Fresh lychees are available at Asian supermarkets here in the California. As are the dragon fruit, but they were soooooo much better in Hong Kong and Singapore. Closer to the source. I don't think they ship well.
