When lifting I usually only listen to songs by Disturbed. When doing cardio I have a bunch that I listen to, my "favorite" right now is Adrenaline by 12 Stones.

Really the only thing I can say is to plan going to the gym right when you get home. That means go home, change into gym clothes, and leave. I would say instead of skipping breakfast, try eating healthier for breakfast and dinner, that way you're only indulging on one meal and you can still maintain your calorie goal.

I would definitely say you're fine where you are. If anything I would do what your PT said and start hitting the weights to tone up a bit. But as of now you look absolutely amazing.
