Usually my go to healthy dinner involves fish because it is so quick to cook! I always keep Salmon, Tilapia & Shrimp in my freezer at all times. Sauteed Shrimp & Asparagus with Lemon Juice is one of my fav's

I had a salad & a lean cuisine... i try not to bring frozen meals too often but when i do bring them for work I always pack a side salad with it or some steam-able vegetables

This year I am only growing a salsa garden, so I have tomatoes, bell peppers, onions, habenero's & cilantro. This is the first year I am not doing my typical zucchini, cucumbers & butternut squash. I grew spinach one year, that was a huge success too.

I am not a fan of soda, never have been since i was a kid, so its water the majority of the day. I have to have a glass of milk before I go to bed though. :)

i am a huge egg person. I usually make those min-egg muffin cups on Sundays for a quick grab-n-go breakfast during the work week. My go to combination is eggs/eggwhites, kale, mushroom & cheese. I also like smoothies (now that it is hot out, hurray!). I prep the fruit in advance and pre-portion them into baggies & freeze,…

I use Sunday to do my food prep! For breakfasts I usually make the mini-egg muffin cups. My favorite go to combination is: - egg whites - kale - mushroom - cheese This week though I changed it up & made my smoothie packs for the week I chopped up bananas, peaches & oranges, weighed them & pre-portioned equal amount into…

i used the normal Shirataki noodles, the angle hair pasta kind because that is what I had in my fridge. My only thing was that I didn't cut the noodles like the recipe called for because I completely forgot, so when I bit into it little strands of noodles pulled out. So next time i will cut the noodles because I can see…

i like to batch cook on Sundays and prep for the work week. I roast or grill a few chicken breasts (and i season each one differently), roast a piece of salmon and make a large batch of quinoa/wild rice/farro, ect. This way I can throw in a steamable veggie in the microwave in the morning, grab my protein choice, my carb &…

I use coconut oil for my hair (works wonders haha) but I refuse to consume it. I just cant get past the nutritional able and all that saturated fat. Just a personal preference though.

I make a large frittata every Sunday and portion it out for the week, that way I can just grab a slice and nuke it. I like to fill mine with lots of vegetables. Kale, tomatoes & mushrooms are my favorite.

- Roasted Brussels sprouts, toss in olive oil, salt, pepper & garlic powder, roast in oven 375 for 20+ minutes. I sometimes like to toss in balsamic vinegar after they are out of the oven too. - Grilled eggplant, slice eggplant into thick "steaks", same seasonings as above, place on preheated grill & grill about 5 minutes…

I do my best to eat clean (aka staying away to prepackaged, processed foods) on a regular basis. My diary is open if you care to look. I find it very helpful to do this by batch cooking on Sunday. For breakfast I make a large fritata with eggs, eggwhites, sauted kale, mushrooms, onions and tomatoes then portion it out for…
