I'm committing to doing cardio 3 times/week and weight training 3 times/week. I'm going to print out a calender and write in the days that I'm going to exercise. I'm hoping a visual reminder will keep me motivated.

Do not worry even the slightest over this supposedly 8 pound gain with your new scales...every scale is different!!! I weigh almost 10 pounds more on my parents' scale but ignore it. I do shoulders and biceps on Monday Tuesday I do back and triceps On Wednesday I focus on bigger leg muscles such as quads and glutes Thursday or Friday I do hamstrings, calves, inner and outer thighs.
