I have lost almost 140 pounds and it was done over time. I have loose skin and I was "warned" about it by my trainer when I first started working with her. I didn't really start to notice it until I got really thin, but it is WAY better than they alternative. Good luck on your journey! :)

340+ to about 208 - doing a lot of weight training and that has helped with toning A LOT! :)

Unsweetend Vanilla Almond milk - unless it's for coffee then I have to use half & half...may eventually go to almond milk, but haven't made the switch yet.

Quinoa is a great way to get protein and it is a complete amino acid. You can always mix that with veggies. When I was eating dairy I would mix greek yogurt and cottage cheese with berries and granola for a complete meal as well. I do a lot of beans and grains and some eggs.
