What do I need to do to gain muscle?

I'd never heard of it until someone mentioned it on another post and said it stands for couch to 5 and is a running program for beginners. Quinoa - anyone tried it?
Just come across a food called quinoa. Never heard of it before but apparently it's all protein and is a good substitute for rice. I love my rice and bread, so need a substitute that's not high in carbs and this seems ideal. Has anyone tried this? What recipes have you used it in?

The morning after... Should I get some rest?
