'Experts' can pry my coffee out of my cold, dead hands. There is as much evidence that it has health benefits as there is evidence to the contrary, anyway. A pre-workout espresso is excellent for you, imo.

If you're having problems with food volume, try some more calorie dense foods...there have been some great suggestions on this thread already, but things like cheese, nuts and bananas are usually how I 'spend' mine.

Honestly, most places have meat and veggies. And can advise on which dishes are best for those with a gluten intolerance, for that matter. No need to over-complicate.

Mhm, definitely save your animal fat. Bacon grease is great, and I made a curry the other night with leftover duck fat which was amazing! Animal fats also make roasted veggies much crisper and tastier than plant based fats. You could also buy lard, especially if you can find an organic variety.

Yep, don't be scared of fat, it is your friend when you're doing a low carb diet. Low carb and low fat simultaneously is impossible and unhealthy. Perhaps try some fattier cuts of meat - duck is good, and so is rump steak. Maybe add in some coconut milk?
