Basically you would use the lettuce like a bowl to hold the other ingredients.

Also couldn't you make a sauce out of the tomato paste and garlic, you may have to use water to thin it out.

Have you tried ground chicken or ground turkey? That may help, also if you use a sandwich thin or one bun they have about 100 calories and come in whole wheat, or multi grain.

Bump Sounds tasty ,I've never tried them with turkey sausage before. If I find it I'll post the one I have, or you can just go to Ally Vincent's live big with Ally and get the recipe I have. It uses quinoa instead of rice.:happy:
