    I haven't read all the newest posts, but I know people were asking about freezing them. Last weekend I made a version of these with diced ham instead of sausage and the meijer brand carton of egg whites vs real eggs. I made a double batch and froze half. the first time I tried them straight from freezer to microwave--YUCK. Terrible texture, besides being VERY "wet." I let the other two in that box thaw in fridge and tried them a day or two later--much wetter on the reheat then ones I just refrigerated. With ones I just refrigerate I wrap them in a paper towel (Bounty, not cheapies) and microwave and they are ok. With the frozen ones I again wrapped them in paper towel and it was completely saturated, rewrap in new one to finish heating, and still soaked.

    I guess most weekends I will be making up a fresh batch of these for breakfasts...and fighting off everyone eating them up on me!

    I just wanted to let everyone know that I tried making these in Silicone muffin cups and it works amazingly well! So much easier to get out than in the muffin tin!

    Making these with southwestern egg beaters, jalapano jack cheese, chunky salsa (or pico de gallo), and MorningStar Farms breakfast sausage diced up (or ham if I happen to have some on hand).
