As others have said I would set your MFP goals to the amount you want to lose per week and your stats and start eating that amount of calories and slowly introduce more carbs back in. You could be eating at or around maintenance (I say around because you said you did lose another 2lbs). 1000-1200 calories isn't very much so maybe you think you're eating more than you actually are since you're so used to eating at a lower caloric level!
