  • You could also do fajitas with portabello mushroom caps instead of the meat. Or add in zucchini, yellow, squash, extra onions and peppers. You could do bean burritos, or burrito bowls with the above too. Add salsa, guac, whatever you'd like to top.
  • Here's a link to chicken cauliflower fried rice that is delish that you could easily leave the chicken out of. I'd probably just increase the edemame by at least double to increase the protein. https://www.asweetpeachef.com/chicken-cauliflower-fried-rice/ I also add in a small chopped onion, some fresh grated ginger and…
  • I just did a maple Dijon salmon a few nights ago and it was great! 2T pure maple syrup 2T water 2T Dijon mustard 2 tsp EVOO 2 cloves crushed garlic Salt and pepper to taste Brush on the salmon, bake in 400F oven until done (10-15 minutes, depending on your doneness preference). This made enough for 2 salmon fillets and a…
  • -Protein shake -Steel cut oatmeal, with ~1T nut butter (I like almond), a few slices of banana, drizzle of honey and cinnamon. I mix it all together and top with berries. I also typically add in some egg whites during the last few minutes of the cooking on the oats for some extra protein. It doesn't taste like eggs at all…
  • Congrats! You look great!
  • I think if what you were doing before was working for you then go back to that. You can still be a part of the community without tracking your calories. What you've been doing sounds very similar to what I'm currently doing as far as how I plate my food and with what and tracking everything down with pen and paper, without…
  • Congratulations! You're doing great! You look amazing!
  • Fitting into a pair of jeans I'd held onto for several years (2 sizes smaller than my peak) and fitting into them comfortably!
  • Congratulations! You look great!
  • More water and more veggies! Plus really trying to pay attention and make sure that I'm actually hungry (not bored, etc) before I eat something.
  • I've been doing the 2BMindset since May and love it! How's it going for you?
  • After the banh mi bowls were such a hit I took a look around littlespicejar.com and found a few other recipes that were great as well. This http://littlespicejar.com/irresistible-instant-pot-beef-stew/ beef stew was very tasty! Served it with some mashed potatoes as suggested and it was excellent. Although it would be just…
  • Oh my goodness. One of the first things I made in my IP were these Crispy Chicken Banh Mi Bowls and wow were they amazing. Everyone who tried them thought the same. This is definitely something we will continue to make again and again. Thanks for the share!
  • Yes, I'm a new runner (jogger) as well. I started in August, or maybe September, I can't remember. I could hardly run 3 minutes to begin with (let alone the week it goes to 5-that was tough!) and after finishing the Couch to 5K program, I can run 4+ miles at a time. I've moved on to the 10K portion of the program now. I…

  • For breakfast lately I've been eating 2 sunny side up eggs on top of a toasted light or cinnamon raisin English muffin that's been toasted and spread with 1/3 fat (or regular-depending what I have on hand) cream cheese. SO delicious and filling. Or an old stand by is steel cut oats with a bit of almond butter, honey,…
  • I would join a gym that your comfortable in and can afford. A lot of gyms will do a few days or a week to trial the membership. Do this at a couple of gyms in your area to find the right fit for you. After that, I would start with some weight machines or free weights if you want. The machines seem to be less intimidating…

  • I think I'll have to try this very soon. Yum! My current favorite way for oatmeal is steel cut oats, mixed with almond butter, some banana, cinnamon and honey and then topped with fresh berries. Blueberries and raspberries are my favorite.
  • I love cottage cheese topped with some diced peaches! Yum! I also enjoy putting them in crepes for cheese blintzes-then topped with sour cream (or greek yogurt) and some strawberry preserves (sugar-free or fresh berries if you prefer to lighten the calories some).
  • Congratulations! All of your hard work this past year has certainly paid off! Amazing job!
  • Working the C25K and this is my first running challenge! 11/1: 2.68 miles Total: 2.68/50 miles
  • You can do it! I'm doing the program as well and just finished week 7, day 1, so not far ahead of you and never ran at all before this program.
  • Definitely spray the pans! Eggs are notorious for sticking! You can also spray and then "line" each tin with a piece of deli meat or bacon/turkey bacon-whatever your preference before pouring the egg mixture in. I've made them and they'll last several days in the fridge or longer in the freezer of course
  • As others have mentioned... I use it to make ranch dressing, tzatziki sauce as well as a sour cream substitute. I've also added it into baked goods to bump up the protein content some. I've also recently been making little parfaits with it. I turned my plain greek yogurt into vanilla by adding a few drops of vanilla…
  • I have a couple that I like. I use a cup of unsweetened vanilla almond milk as a base, 1-2 scoops of strawberry protein powder (I use Optimum Nutrition), a handful of ice and then anywhere from 1/2 cup to 1 cup of frozen berries and blend it up. Raspberries are my favorite but strawberries, blueberries and blackberries (or…
  • Yes, been struggling with this since last year. It's so frustrating! I went to PT for a few months in the beginning of the year and honestly didn't see a large improvement with just that. What did really help was going to the chiropractor regularly for adjustments. My chiro also using something called a DMS (deep muscle…
  • I'm in for 50 miles. This will be my first running challenge! I'm on week 7 of the Couch to 10K program, so I should be hitting the "5K" mark at the end of next week then bumping up my duration after that. Following that plan, I should be able to get my miles in!
  • Gotta love eating like a hobbit!
