It's about reducing overall body fat percentage, whether with cardio, weightlifting, or a mix of both. I prefer both (or boxing as my "weight lifting" - the muscle building from boxing 3x a week is intense) because both are beneficial. Just keep on reducing body fat overall.

I weigh before...better to overestimate than underestimate :) But chicken doesn't lose that many calories (the weight loss in meat comes from water) for ground beef, you may have some fat coming off. But I would err on the side of caution.

It's fine. Your days will vary. For muscle gain, make sure to do some sort of resistance work and get enough protein :) everything else is option. I sometimes feel better with less carbs, and fuller with more fats, but some days I'll be way over carbs and that's okay! Find what works for you!

I have "cheat foods" every day, if that's what you want to call them. A cookie, scones, whatever. But guess what? It's all built into the calorie count, so it doesn't matter. It keeps me sane and sticking to it. If you deprive yourself, you'll have binge days more often than if you just build it into your life.
