How long have you been keto? Are you fat adapted? If not, you'll be just starving yourself. If you're truly fat adapted, fasting will cause the burning of adipose tissue. If not, you'll be catabolic, hungry and feeling like you're fasting.

Great job! I find if I exercise more without tracking food intake I just naturally eat more because I'm hungrier from the extra exercise. If I want to get leaner I have to be deliberate about my diet.

The only way you could really be increasing body fat % as a ratio of total body weight is to just fast. Your body will ditch LBM like mad. ^^ This! Make sure you understand exactly what was recommended. If you cut carbs, you (by default) end up high protein and/or high fat. Without a gall bladder I can't imagine that would work well. You likely need a very balanced diet with controlled meals at regular intervals to manage blood sugar naturally.
