I use cucumbers as toppings on food I would usually put tomatoes and spinach on. I use all three on burritos, nachos, etc. It's delicious! :)

Make your own pizza! It's fun, way lower in calories, fat, cholesterol, etc. Plus, you can put whatever toppings you want without paying the extra $0.75 for each one. I usually put a lot of vegetables and some low fat cheese. No need to be afraid of pizza, just watch what kind of pizza it is that you eat!

Sometimes I eat two breakfasts since I get up so early for work. Before I leave I'll eat some oatmeal (sometimes 2 packets if I'm starving), and then around 10:00 I'll eat a second breakfast. HA! To not see a difference you would have to not do the program. Two weeks in I could already see an incredible difference in my legs. I wasn't even following the nutritional plan. If you do the workouts and do your best, I guarantee that you will love the results (I sound like a commercial :p ).

When I did Ab Ripper, I loved! I could see a difference within a week, so I think you should go for it (especially if you're doing all that running!)

My favorite vegetarian sandwich has: 1 whole wheat sub roll 1 veggie cheese slice avocado bell peppers (red & green) tomato spinach cucumber zucchini sweet chile sauce total it's about 350 calories, but it's so filling!
