There simply isn't enough info here to prove anything. What was your starting weight? And what is your goal weight? Did you change your workout routine? Did you measure body fat percentage? How do you know that you aren't sacrificing muscle?

Not enough can be said here. The GI assumes sugar absorbtion in a fasted stated with no other foods being present. That is generaly not how we eat. As long as you are burning more calories that you are eating than you will lose weight. You could try soy milk if the sugar is a big concern for you but, I don't think I would be concenred about it. Beyond the MFP numbers, is there a reason you are concerned with sugar intake?

I weigh once a week and check my Body Fat percentage once a month. That I can make sure I'm also maintaining the lean muscle and just losing the fat.

This is a difficult question since you haven't said anything about your goals.
