Eat at maintenance if you have a cold/flu, supplement with a daily vitamin if you're having trouble keeping food down or having GI distress. This is a lifestyle change, there will always be days where it's just not practical to eat at a deficit.

Working out can cause you to retain water. You can't weigh yourself at different times of the day with different conditions.

It's math. Take what you need to eat in a normal day and subtract it from the 3000. The number you have left is the number of fewer calories you need to eat to get back on track. It doesn't matter what you eat, all that matters is how many calories it is.

I put dried fruit in mine, but I've always liked the taste of Quaker oatmeal since I grew up with it. I do love McDonald's oatmeal, as was mentioned earlier. Even with the sugar added it's only 290 calories, a perfectly good breakfast for most people's deficits and maintenances.

I love to game but it's something I've had to give up doing as much in order to get 8 hours of sleep and it really sucks. But that's life, no one said it wouldn't suck. Better to be healthy than indulge every whim like so many people do nowadays.

Eat meals that you can identify individual components of, Google some calorie estimates, and pick the one that seems the most accurate. If that's too hard then just eat fast food which has all the calories listed on their website/Google.

Like rhiannon said, you can't rely on motivation, you must have discipline. You have to keep up healthy habits even when they're the furthest thing from your mind.

I think most people will always be slightly hungry at a large deficit. But once you've lost the weight and go back to eating at maintenance, your hunger levels will eventually adjust (it probably won't be instant..don't get discouraged.)
