Oatmeal - I like mine with protein powder and PB2. Tofu scramble Leftovers from dinner.

I remember the first time I actually measured out one cup of rice. WHAT? THAT's 200 calories? Same with peanut butter - my first legitimate "tablespoon" of peanut butter was a sad, sad milestone. Honestly, I'm surprised I wasn't fatter.

Tofu scramble with lots of veggies or oatmeal with plant-based protein and a little peanut butter are my go-tos. Clif Builders are great if you're on the road.

No, that is not how food works.

If you buy vital wheat gluten in bulk, you can make seitan at home. It's vastly cheaper, and easy to make! Textured Vegetable Protein (TVP) is another delicious and cheap protein source - it's pretty flavorless, so you can use it for mock ground meat all the way to a high-protein hot cereal. I'm also a big fan of chickpea…

Vegan here, but for ethical reasons. You can be a healthy vegan or an unhealthy vegan, just like you can be a healthy omnivore or an unhealthy omnivore.

Low carb eating helped me start to lose weight initially without counting calories.

Tofu, TVP, and seitan are good sources of low-carb vegetarian protein. Additionally, try avocado, zucchini, nuts like almonds, and berries.

Lentils, dried beans, and dark leafy greens are fantastic non-beef sources of iron.

I've been a vegan for almost four years now, and was a vegetarian for about a decade before that. If you're not very interested in cheese, then I'd suggest looking into the Asian recipes - ivu.org/recipes is one of my favorite resources for delicious and flavorful vegan recipes. You can also consider big hearty salads,…

My name is Melissa, and I'm excited to mentor three individuals in the coming year. I've always loved to eat big quantities of food, and as a result I was fat for my whole life. I've lost almost 70 pounds since graduating from college and have successfully maintained that loss for over a year. I live with my fiance in…

I lay my veggies out on a cooking sheet, spray with nonstick spray, sprinkle with salt, and let them hang out at 400 degrees for 50-60 minutes.

I live in a major metropolitan area. $400 per month for my fiance and me, and that includes groceries, meals out (usually once a week), as well as personal health and beauty products. We don't eat animal products, and I pack my lunch every day - both the most important ways to keep our budget down!

Protein powder and seitan. Seitan is a really delicious protein made from vital wheat gluten - you can buy it premade, but it's cheap and easy to make it at home.

I wear a heart rate monitor when I exercise, and eat back most, if not all, of my exercise calories. I exercise because I like to eat.

One of my all-time favorite breakfasts is two rice cakes spread with two tablespoons of peanut butter and a sliced banana. Soooooo good, quick, and the combination of textures is nice!

Soy is only going to be an issue if you have a thyroid problem. The estrogen in a serving or two of soy a day are no worse for anyone with a fully functioning thyroid than the amount of estrogen in oral contraceptives.

Rehydrated, TVP is a great replacement for any ground meat - I use it a lot in taco meat and pasta sauce. With some crushed anise seed, soy sauce, tomato paste, and garlic, it becomes an amazing ground-sausage-thing. I also love it as a high-protein breakfast - you can do half TVP and half oats and dress it up just like…

I'm a vegan and I wouldn't be full on nuts and greens either. What vegetarian/vegan proteins have you explored? Do you eat eggs? Yes, a grilled-cheese-and-french-fry vegetarian diet is going to get in the way of health and fitness goals, but that's not an optimal diet for anyone, vegetarian or otherwise. The issue with…

Yes. I exercise because I like to eat a lot.

This oatmeal is not messing around - looks delicious!

Maybe it's that it's hard to see to the other side of the fence. Yes, there are vegans who butt in, who are militant and angry, but like any social group, they aren't representative of all of us. I know that I and other vegans put up with plenty of unsolicited commentary about the way we eat - at the Thanksgiving table,…

My favorite plant-based proteins: tofu, tempeh, and seitan. Seitan is delicious and toothsome, and has a similar nutritional profile to skinless chicken breast. Tempeh is my close second, and clocks about 20g protein per four ounces. Try making oatmeal with half oats and half textured vegetable protein to boost the protein…

I don't think that's so much of a problem with "the vegan lifestyle" as "vegans who also happen to be a-holes".
-
Actually, "organic animal products" doesn't have much to do with animal welfare. It means that animals must be fed organic foods, but a lot of welfare-related rules are self-regulated. Male chicks in the egg industry are still "disposed of", dairy cows can be confined/tied up, chickens still get their beaks clipped.…

Like any sort of commitment - take weight loss, for example - it's fun and new at the beginning, but once the novelty wears off, it gets harder. When I get "back on the wagon", woah, I'm not even hungry eating under my calorie goal! Let's get up early and run! This is easy! Give it a few weeks though, oh man, my body is…

Return it or sell it on Craigslist? Not sure what the issue is.

I can't stand raw broccoli, but cooked any way, I can eat a whole field full of the stuff.
-
I take a B12 suppement.

The stuff that comes in a can is much higher calorie than the "coconut milk beverage" type drinks that come in a carton. So Delicious and Almond Breeze make some that are between 50-60 calories per cup. I usually use those in Thai foods, with a little xanthan gum to add some of the "creaminess" back in.
