If the entry has an option for grams then I will do whatever I want/need at the time. If it only has the generic serving size I weigh it to the serving size exactly because I usually don't feel like doing the math.

I watch my protein because I want to keep as much muscle as I can while I lose weight. And I watch fat and fiber because I like pooping regularly.

I probably have protein with every meal because it works out that way (even my oatmeal has some protein.) I do plan to meet my protein goals each day but I don't have a minimum amount of protein per meal, just for the day overall.

I always log everything, even if I'm going to go way over. It keeps me accountable, and helps to keep me from being frustrated if my loss slows down since I know just how much I went over. I get chicken fajitas without tortillas. My fork is just as good at getting all of the yum to my face as the tortillas and I'd rather have 400 calories of sour cream and guacamole.

I have noticed that with my Fitbit, too. I think it expects me to keep up the same rate of activity throughout the remaining hours of the day, so it takes calories away as the day/night goes on. The Fitbit group may have a more accurate answer for you.

You can also look at your calories and go by the weekly deficit and eat some (or all) of those leftover calories the next day.

I eat it! If it is too late to make it work into my calories that day then I figure it out for the next day or that weekend. I usually log the night before anyway so I play with the numbers so I can have what I want.

If you lowered your goal to 1 or 1.5 pounds a week you would have an extra 250-500 calories a day and probably wouldn't feel as hungry since you'd have calories for snacks. I know it's tempting to lose it as quickly as possible, but it's important to do it in a way that is sustainable to you.

As long as you're in a deficit it doesn't matter when you consume the calories. Your body is burning calories constantly just by keeping you alive, and it doesn't care about our standard 24 hour clock.
