  • I buy a lot of fresh meat and then freeze it. I definitely keep meat frozen longer than a month, but the meat is wrapped very well, and placed in a freezer bag as soon as I get it home from the store. At the first sign of discoloration or freezer burn, it goes in the trash. There's a good guideline here:…

  • If you try white albacore in water, the smell is about 1/2 as potent. However, it also has a tendency to have a higher mercury content. So...I guess there is a trade off. I prepare tuna with a little bit of hellman's mayo (about a teaspoon) and a drop of dijon mustard. I also add chopped dill pickles, onion powder, parsley…

  • thanks for posting! can't wait to make them.
  • Made this for dinner -- delish!! I used thin sliced chicken breast so I didn't have to pound the chicken. With the thin slices, I only needed 3/4 of a wedge of laughing cow, and 2 thin sliced pieces of ham. They stayed rolled without toothpicks or the use of a muffin tin. I topped with a light spritz of olive oil and grill…
