Tomato Soup

This was in an eMagazine we received from Physicans Mutual earlier this year. Very healthy and tasty. 50 calories per serving. All it needs is a side of grilled cheese sandwich (just kidding!).

INGREDIENTS

2 cups low sodium chicken broth
1 cup chopped onion
1 cup chopped celery
1 tbs thinly sliced fresh basil
2 pounds plum tomatoes cut into wedges
2 tbs tomato paste
1/4 tsp salt
1/4 tsp black pepper
6 tbs plain yogurt
3 tbs thinly sliced fresh basil

DIRECTIONS

Put the first 8 ingredients in a large pot, bring to boil, reduce heat and simmer for 30 minutes.

Use immersion blender, or in several batches, use regular blender (remove center piece of blender lid to allow steam to escape and hold a towel over top of lid to avoid splatters). Blend until smooth. Serves 6. If you like, stir in 1 tbs yogurt and fresh basil per serving.

    Recipe is very interesting and healthy but i think we can add beetroot juice to it so it can get a amazing color.

    I usually just cook for myself, so I don't worry too much about the color of foods, but I'll definitely remember this tip if I make this for other people.
