Lemon Extract Vinaigrette?

Hi MFPals!

Anyone ever used lemon extract for an olive oil/balsamic vinaigrette recipe? If so, what was the recipe?

I've found plenty of recipes that call for fresh lemons but am curious about using a wee bit of lemon extract with the olive oil for dressings and sauces instead.

    What is lemon extract? Is that concentrated lemon juice?
