200g brussels sprouts, steamed.
165g Arla protein cottage cheese.
1 heaped tsp or 1 flat tablespoon of white miso paste.
1 tsp Thai red curry paste, add another if you wish.

Mix the cottage cheese with the miso paste, then mash the steamed sprouts with the cottage cheese mix.
Pre-heat oven to 200C, then put the mixture into an oven dish in a flat layer and cook for 10 minutes, or until the top has began to brown. Remove from oven and scoop into a bowl and then mix in the Thai red curry paste.

    Another variation of this is; substitute the cottage cheese for 125g of quark and don't bake it. It ends up as a tasty substitute for mash potato and is slightly quicker to prepare and cook.
