    Baked Oatmeal
    Makes 12 muffins

    3 cups rolled oats
    1/2 cup brown sugar(or less to taste, I have used as little as a 1/4 cup)
    2 tsp. baking powder
    2 eggs
    1 cup (apple sauce, pumpkin puree or mashed banana)
    1 cup milk
    1 tsp. vanilla
    1 tsp. Cinnamon or pumpkin pie spice(optional)
    pinch of salt(optional)

    Preheat oven to 375 degrees.

    Line a muffin tin with cupcake liners. Spray liners with cooking spray. In a large mixing bowl, combine rolled oats, brown sugar and baking powder. Set aside. In another mixing bowl, combine eggs, (apple sauce, pumpkin or banana), milk and vanilla and whisk thoroughly. Pour wet ingredients into dry ingredients and mix. Add any mix ins. And stir to combine. Scoop batter into prepared muffin tin. Bake for 30 minutes. Enjoy!

    Mix Ins or garnishes:(optional)
    Crystallized ginger, chopped
    Chocolate chips
    Fresh chopped apples
    Nuts
    Blueberries
    Dried fruit
    Peanut butter

    Apple Chips.

    Core and slice a few apples into rings. I used Gala but I'm sure any kind would be good. Toss with a few teaspoons (or tablespoons, I won't judge!) of cinnamon. Bake at 200F for 2-3 hours. They should be dry but soft. They will get crisper as they cool.

    The original recipe I saw said to add some sugar too but I think the apples were plenty sweet enough without.

    APPLES! Apple pie, apple crumble, toffee apples, stewed apples, apple crepes, apple and pork sausages....they're just delicious, especially when they're in something very unhealthy! My favourite autumn fruit is plums though, plum crumble with custard is my ultimate comfort food

    My go to for apples is to dice an apple or two, drizzle a small amount of water over the apple and sprinkle cinnamon over it. Microwave for 3 minutes. Add a dollop of whip cream and stir. It tastes like baked apples and is low in calories.

    You can't make me choose! Love them both. Sliced apples with homemade peanut butter is my go-to afternoon snack. Except when pumpkin seeds are. Two of my favorite falls recipes are a pumpkin risotto and a pumpkin tortilla soup
