Fianlly got the calorie *kitten* kicking factory running again!

Whats up MFP,
17 5'8" 210 lbs.
One year ago I was 240 but I have been on a freeze since before Christmas. Do you know how freaking frustrating that is! I have tried everything in the books but I just could not get the ol' calorie *kitten* kickin' factory back up into operation. I tried everything from less calories along with running, swimming, biking, and NOTHING worked. I thought I was done and there was nothing I could do to reach my final goal of 180 pounds. But, I knew there had to be SOME hope out there. As I started doing some research I saw that what I was doing (eating around 1000 cal net) was SOOOOO wrong and my was causing my body to retaliate, but do you think I believed it? pshhh no! I mean come on, think about it, if I'm only bringing in 1000 - 1400 cal a day I should be melting off the pounds in this hot Florida sun, right? I could not figure it out, why was my body holding on to all the weight. Well last week we went on a camping trip. I continued to drink ONLY water, orange juice and Powerade Zeros but I did not care what I ate. I figures forget it, nothing is going to work. I'm gonna do what I want and eat what I want. For granted I didn't eat giant portions but no lie I did not put a single thing into MFP this week. I didn't even exercise except the little bit I had to move to walk to the beach and keep from falling off the float because of the waves. When I got back I wanted to weigh in just to see how much I had gained... You'll never guess what happened then. I LOST 3 POUNDS!!!!! My mom on the other hand continued her healthy eating and only lost .2 pounds. This was kind of a eye opener. For the past two days I have been doing what I researched on. I wen online and found a TDEE calculator and took 80 percent of the total it gave me. This number I used as my net caloric intake/day for MFP. And what do you know, after 2 days ive lost another pound and now down to 210. I don't know what it is but it works. When I say I am eating 1900 calories per day I don't mean junk food and chip with a side of pizza and soda to drink. What I eat is something very high fiber (oatmeal in my case) for breakfast. For lunch I change it up a little and eat a huge salad. I have made my own greek dressing... (will post pics and recipe below). I also eat a protein bar for first snack and and some fruit of veggies for a second snack. For dinner I eat more chicken or fish (white) cooked different ways each time. So far it seems like this is working a lot better than barley taking in any calories. Also another plus, I have not exercised at all yet this week and I have still lost the extra pound.

Greek Salad

Dressing: Serves 14
107 cal per serving
3/4 C. EVOO
1 C. Red Wine Vinegar
2 tsp. garlic powder
2 tsp. Oregano
2 tsp. Basil
1.5 tsp. Black Pepper
1 tsp. salt
1.5 tsp onion power
2 tsp Dijon style mustard
half lemon juiced

Actual salad
calories may fluctuate depending on how much product you use
About half a head of lettuce
9 grapes
1-2 frozen grilled all natural chicken breast tenderloins (Tyson)
1/8 cup your choice of nuts (pecans and walnut work best)
couple strips of red onion
1/8 cup feta cheese crumbles
1-2 brown hard boiled eggs.
5 TBSP of home made dressing
