So, I'm obsessed with chicken salad (specifically the kind with grapes and nuts) and know in moderation it's okay.

I love cooking & tryin new things, so I was wondering if any of yall had a healthy chicken salad recipe to share. (:

    I remember this salad they sell in carls jr, with spinach, chicken, cranberries, feta cheese.. OH GOD :heart: sooooo damn good!

    Oh, yum! That sounds amazing. I'm bummed we don't have a Carl's here now! Haha. Feta with anything is so delicious and definitely worth tryin! (:

    Oh...my...gosh.

    I made a chicken salad last week, it was delicious and really low calorie. Here's what I used;

    60g Chopped Bell Pepper (I used red because that's all I had)
    105g Roasted Chicken Thigh Meat (skin & bone removed after roasting)
    80g Chopped Onion
    10g Chopped Chilli Pepper
    70g Raw Courgette, Chopped
    50, Low Fat Natural Yoghurt
    Salt, Pepper, Lemon Juice, Dried/Fresh Mint to taste.

    Just mix it all together in a bowl and leave to sit for an hour or so for the flavours to marry a bit.

    Give it a try, the whole salad was only 331 Cal's, 7g Sat'Fat, 22g Protein and it lasted me 2 days. :)

    Of course if you wanted to reduce the caloric value even more just use skinless grilled breast meat but I'd roasted the chicken the day before so used that, also my diet is really poor when it comes to fats so I try to get some in whenever I can, lol! :)

    If you do use dried mint then please do let it sit for a while otherwise you won't really get the full flavour. That and the lemon juice made it taste extra fresh, especially if you like hot chilli's like I do. :happy:
