Meals that are dishy enough, and last a few days

Hello, I am wondering if you can help me.
We used to do a monthly shop, but now we are going to do it weekly.
I am wondering what meals I could cook, could be turned into something else the next day from leftovers, or what meals will do for both days?

    Tuna bake is my staple ... Tinned tuna + Veggies + Sour Cream (or tinned tomatos if you are avoiding fat) all topped with grated cheese. Lob in the oven until golden brown.

    Stick some herbs and spice in there and the taste can be even better the next day.

    I used to lob pasta in there but I'm avoiding carbs at the moment so I do without.
  • That would be great for me, sounds nice. By my other half isn't a fan of tuna.

    I do a big basic ragu sauce - onions, mince and tomatoes. We usually have spag bol (or some other pasta). Then on subsequent days it can become enchilladas, with the addition of spices and peppers and/or celery and/or kidney beans (I use the Discovery sauce which has the spices in the lid). Also it can become cottage pie with carrots ad/or celery added, with a mashed potato topping. Also it's easy to add as a filling in a baked potato. Chilli con carne with rice etc etc etc!

    What do you put in your tuna bake? Obviously tuna but what veg? Cause some veg will overpower the tuna taste.
    I fancy that tonight. I would leave out the pasta too.

    Spag bol sometimes becomes a chili con carne the next day in my home. I just add kidney beans and chili, then serve it up with rice instead of pasta.
