    You may get more response if you post this in one of the vegetarian or vegan groups. I have some vegan recipes posted in the Eat to Live group as well. One of my favorites is I roast eggplant in the oven, dice that - steam some kale, saute onion, garlic and mushrooms and i turn that into a chunky ragu with some jarred marinara sauce. Put over spaghetti squash and its delicious, plus vegan and very low in calories! For extra protein, throw in some white beans, or vegan mozzarella.
