    I am undecided what to make with the ground beef. I am tired of eating the same things all the time and I made chicken too many times this week. Any suggestions for dinner are appreciated!:smile:

    Hi - I make a delicious meatloaf with vegetables (see recipe below). It's a hit with anyone who has eaten it.

    1 lb. ground beef (the leaner the better)
    3/4 cup rolled oats
    2 eggs, beaten
    1/3 to 1/2 cup each: chopped onion, chopped celery, chopped carrots, chopped peppers
    8 Oz tomato sauce
    1 tsp salt
    1/4 tsp pepper

    Mix and turn into a breadloaf pan. Cook at 350° for 1 hour. (6 servings @ approx. 225 calories each).

    Serve with a nice garden salad, if you wish.

    Beef, a bag of frozen stir-fry veggies, brown rice, a splash of low sodium soy sauce and voila- you have beef stir-fry. I had this about 2 ago lol.

    bake some round, hot house tomatoes 'til they're soft. hollow them out once cooled until you have a deep pocket in each one. brown ground beef on the stove with crushed garlic, onion, shallots with kosher salt and black pepper. wilt some basil into it. stuff inside tomatoes, bake for 10-20 minutes. yum. :)
