40 Clove Garlic Chicken - for crock pot

2 stalks celery
1 (4 lb.) fryer chicken
3 T. olive oil
1 tsp dried thyme
1 tsp. dried sage
1 tsp. salt (optional, I don't use it)
1/2 tsp. dried rosemary
1/2 tsp. pepper
1/2 c. chicken broth (reduced sodium)
1/3 c. dry white wine
3 heads garlic
1 lemon, quartered

Coarsely chop celery and place across bottom of crock pot. Remove neck & gizzards from chicken. Thoroughly rinse & clean chicken & pat completely dry. Place lemon quarters inside chicken cavity. Rub olive oil all over outer chicken skin.

In small bowl, combine dried thyme, dried sage, salt, dried rosemary & pepper. Mix well & sprinkle seasoning mixture over chicken. Place seasoned chicken over celery in crock pot. Pour chicken broth & dry white wine around chicken.

Separate garlic into individual cloves, but do not peel the cloves. Place cloves all around chicken. Cover & cook on low setting 10 to 12 hours, or on high for 7-8 hours. To serve, remove chicken to a serving platter & let cool slightly before slicing.

Serves: 6-8

    I have a fryer chicken in my freezer and I'm SSSSOOOOO using this recipe on it! I really didn't want to make it the "traditional" way that I ALWAYS do, so thanks so much for this new spin! :drinker:

    I made this yesterday - found it fall off the bone tender in about 8 hours on low. I really enjoyed the flavor, and the garlic aroma in the house, but find that I'm not too fond of the consistency of crock-pot cooked chicken - the texture is just different.

    I plan to make it again but will do a long slow roast in the oven instead.

    All in all, a winner of a recipe.

    Thanks for this great recipe! I tried it this weekend. Since I don't have a crockpot I put it in my pressure cooker (it cooked in about 2 hours (I just doubled the wine and water to make sure there was enough liquid in the cooker). I would add double the amount of celery in the bottom since it turns out so delicious that you will want to eat more!

    I also used the drippings to make an easy gravy (Just added a couple tablespoons of flour to some of the drippings) - not very healthy but who doesn't love gravy :)
