get a couple bags of broccoli slaw, mix with a cup of balsamic vinaigrette and toss. makes an awesome "coleslaw" like side!0

Hey! This might not totally fit the standard of "BBQ", as in like potato salads and cold slaws, but i have this really YUMMY and healthy recipe that I make and everyone loves it, and most of all its sooo easy it takes like 10 minutes to make! The recipe serves four:
1 ear of corn
2 pints of cherry grape tomatoes (cut them each in half)
1 avocado (peel it,cut it in half, take out the pit, and dice it)
2 scallions (thinly sliced)
2 tablespoons of lime juice
1/4 cup of cilantro
Salt/Pepper to taste
You can also add red onion if you like it

My favorite standby is the "berry salad." Or a platter of mixed berries arranged. Every single time it gets devoured. Fill in grapes if you can't find the berries, but I use the standard - strawberries, raspberries, blue and black. Yum.0

We love to grill eggplant or zucchini. Slice, spray with cooking spray, season with salt, pepper, garlic powder and grill till soft and brown. Tastes soooo good and barely any calories0

Skewers are always awesome for the bbq. We do shrimp and load up the veggies and it never amounts to large calories but are so tasty and filling! The best part is that you can make them with exactly what you want on them.0

Curry Quinoa & Mango salad:
4 servings
3/4 cup quinoa (red or white)
1-1/2 cup low sodium chicken stock
1-1/2 tsp of curry powder (I use mild/sweet curry powder as my family are not spice loving people)
1/2 tsp garlic powder
1/4 tsp pepper
Add this together in a pot, bring to a boil over med-high heat. Once boiling, reduce to med-low and simmer until the liquid is absorbed (15 - 20 min)
While the quinoa is simmering.
Dice seed and dice a whole mango and dice a bunch of green onions.
Once the quinoa is cooked, put it in a bowl in the fridge. After it cools mix in the mango & onion.
This is a great summer salad for a BBQ!0 -
One of the places you get hit hardest when eating with a group is dessert. If you want to handle that you can try grilling pineapple rings with a little sugar and cinnamon. You can search for some ideas on line. Even with a SMALL scoop of ice cream you would be better off than eating cake, pie, etc....0

Napa cabbage salad...it sounded nasty to me but I had a head of napa cabbage from the farm that I had to use.
You can definitely cut down on the butter, oil and sugar without any real negative impact on the taste and save a ton of calories/fat. Everyone loved this recipe even though it doesn't sound that appetizing, it was super tasty

I did it in a different order to save time. Preheat oven, make crunchies, stick in oven, make dressing. Then while the crunchies were baking and the dressing was cooling, I chopped the cabbage and green onions.0
