Baked oatmeal

3 cups oatmeal
1/2 cup brown sugar (you could use less if you want)
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp salt
1/2 cup unsweetened applesauce
1 tsp vanilla
2 eggs (egg replacers are fine)
1 cup milk
1 pint blueberries, raspberries, or other fruit (you could substitute 1 cup raisins)

Preheat oven to 350 degrees. Mix all the dry ingredients in a bowl. Add the wet ingredients and mix thoroughly. Fold in the blueberries. Spread into a 9x9 pan that has been sprayed lightly with non-stick cooking spray. Bake for 20-30 minutes until the top feels firm to the touch. This is delicious hot or cold, and can also be served topped with milk.

    Baked oatmeal is awesome! Thanks for the recipe. I have been doing one with crunchy peanut butter, but I am ready to switch it up a bit.

    This will be great now that the school year is about to start. I'm going to need some quick go-to meals for those early morning rushes out the door.
