I made a chorizo, chicken & shrimp paella last night with a flan for desert (thank you acg:)... It may have actually been my favorite meal to date. It even beat out a beef wellington.

    Sadly this is not a recipe I found online, so I actually have to type *LOL* I'm going to type it in order of what I actually did... It's a bit time consuming.

    2 hours before you begin cooking...
    STEP 1: 3 chicken breasts, cut into pieces (you could do thighs w/ skin for a better flavor... I didn't have any)
    Rub chicken with the following mixture & plop it in the fridge to marinate:
    1 tbsp sweet hungarian paprika
    1 tsp hot paprika
    2 tsp oregano
    kosher salt & ground pepper

    STEP 2: Take a generous pinch of safron threads and begin soaking in 1 tbsp hot water.

    STEP 3: Briefly fry up a pound soft chorizo IN your paella pan with some grapeseed or other oil... not cooked through, just to crisp up the outside and season your pan. Set aside in a container in the fridge.

    STEP 4: Prep the following so you can relax and cook it while drinking a lovely glass of wine...
    1/2 diced Spanish Onion
    3-4 minced cloves of Garlic
    1 diced pepper (I used a red pepper simply b/c I had one)
    16oz or so of cooked, peeled tomatoes (Red Gold Crushed Tomatoes if you go canned...I'm a tomato snob and if you're not going to cook your own, these are the best)
    Chicken stock... I used about 34 oz?
    1/2 cup frozen peas
    1 lb jumbo raw shrimp, peeled & cleaned
    1 bag Saffron Rice (you can use a variety of short grain rice, but the Vigo Saffron Rice is truly amazing)


    STEP 5 = Cooking time (this is all stove top, no oven):
    Cook marinated chicken in the chorizo fat w/ and oil in your paella pan
    When nearly done, add chorizo and continue cooking it through
    Scoop out your meat and set aside when done.

    Put your pepper, onion & garlic in your paella pan and cook until your onions are translucent.
    Add tomatoes and simmer until your mixture thickens and melds together. (Add some salt & pepper).
    Stir in your expensive as hell Saffron that's been sitting in water....
    Stir in your bag of rice (should be a couple cups of rice), and coat in the tomato onion mixture
    Simmer the above for a few minutes
    Add your chicken stock and blend everything together well.. then leave it alone. Go drink your wine.

    Every 5 minutes, go stir the above for a total of 20 minutes. Don't move it around constantly and be all needy... Drink your wine.

    Now, go add your raw shrimp, chicken & chorizo and stir it all together. Cook that another 5 minutes or so.

    Looking good? It should. Add your frozen peas and blend it all together well. Lay slices of fresh lemon on top. Cook that another 5 minutes or until your shrimp are no longer translucent.

    Voila. You are now ready to feed roughly 8 people.
