Stuffed Portobello Mushroom Caps 105 calories or so

Tonight while making dinner my boyfriend he wanted portobello mushrooms and he came up with this for a stuffing. So good.

4 large portobello mushroom caps

Mixture:
about 1 cup chopped red onion
Medium tomato with seeds removed
2 wedges lauging cow cheese (mozzarella and sun dried tomato)
4 tbls 2 % cottage cheese
1 tsp oregano
1/2 tsp adobo
2/3 cup white mushrooms chopped
1/4 cup reduced fat sharp cheddar cheese (50% reduced fat) or cheese of your choice

Sautee the onions,mushrooms and tomato with minced garlic on low heat so the tomato does not get mushy or put it in after. Mix the rest of the ingredients then add sautee veggies. Mix all together. Grill mushrooms before stuffing to soften then add mixture into the mushrooms and top with shredded sharp cheddar or cheese of your choice and melt. Very good and great as a side dish :)
