How do you beat the heat?

What meals/recipes get you through the summer without having to turn on the oven? I don't have A/C in my house and refuse to cook everyone in the house so that I can make dinner. So how do you make it work and still eat healthy?

    I use my crock pot a lot and we grill! We also eat a lot of salads in the summer.
  • I use a nu-wave oven. Works like a charm.

    There's always the grill. Salads, cold soup, cold noodles. Cook at night and portion it for the next day. Use the stove (it doesn't get as hot as the oven). Open lots of windows. Usually, I either use the grill or cook most of the protein at night and make salads and wraps in the morning.

    You can also use a solar oven. It takes longer, but it does the job. =)

    I use my Cuisinart Grill/Panini Press to cook meats, kebabs, even grill fruits(pineapple) and veggies. I just set it up near my stove so I can vent any steam out of the stove hood. Also, crock pots are great for many one-dish recipes.
  • Well here in the uk the weather has been pretty awful this year. That it doesn't matter... It's quite nice to put the oven on...

    Pasta salads, lots of cold sandwiches. I don't even like to eat warm food when it's really hot. A pasta salad is just as good as any meal, add salmon, or tuna, or chicken, your favorite vegetables, a lowfat honey mustard or a vinaigrette, season with some pepper or Mrs Dash.

    I use my grill and crockpot but since its been anywhere from 105-110 degrees here I have been using my crockpot alot more.
