I have a feeling I am going to have a large abundance of cucumbers.
does anyone know if you can can cucumbers for the winter? I know
most veggies can be but I don't know that anyone has out side of making
pickles. I don't want to add anything but water and maybe some salt
but I wondered if it was possible.

You could theoretically can them but the bigger question is what will you do with them at a later date? Pickles you eat straight up but I can't think of what I would do with a wet caned cucumber!

I belong to a CSA and received a load of cucumber. I made a big vat of soup and froze it. It is a cucumber soup that is super healthy, creamy and delicious! I never had a hot cucumber soup before and it was surprisingly delicious!

I can remember my mother cutting up several cucumbers and putting them in a light salt brine and store it in the fridge to serve with dinner at night. I loved them. Would eat half the container myself. It's why I wondered if they could be canned.
