Pumpkin Pie for Breakfast
I tried this quick and easy pumpkin pie recipes and altered it a bit for breakfast. I added 1/4 cup quick oatmeal and 1/4 cup fresh blueberries. I micorwaved for 2 1/2 minutes then topped with cream cheese.......oh sooooo delish........can't wait for breakfast tomorrow !!!!!
2. 2-Minute Pumpkin Pie
If you need a little something to satisfy your sweet tooth, whip up this 75-calorie pumpkin pie for one. This simple recipe, pared down to the most basic and common ingredients, only takes 2 minutes to make, but the end result tastes as delicious as traditional, calorie-packed pie.
Ingredients:
1/2 c. pumpkin puree
1/4 c. egg whites (from an egg or carton)
Sweetener
Cinnamon or pumpkin pie spice
Directions:
Mix together all the ingredients. If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites. Microwave for two minutes. Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing. Top with toasted pecans.

I added about a tablespoon of Equal and about a tablespoon of cinnimon, but I mixed the whole can of pumpkin which was 3 1/2 servings and added enough egg whites to equal 3 1/2 servings also. After it was all mixed I divided it up into 4 different small serving bowls The first morning I had it plain and it was ok, but then I tried adding 1/4 cup oatmeal and blueberries before i cook it.

Not sure abot the whole egg equaling 1/4 cup but I would think it would be pretty close. I bought a carton of egg whites, but I think next time I make it I will try the wole egg. Be a bit more protein which I could use more of !!!0

Someone posted this last week. I've been using egg beaters and 1 tsp Splenda brown sugar, 1/2 tsp or so of the Pumpkin Pie Spice mixed in + some cinnamon on top. Mine comes out around 96 calories.
