Homemade Frozen Meals?

Hi all,

So as much as I try to "be good" and make lunch every day, sometimes I just really don't feel like it. My current fall back is tuna, crackers, relish "Lunch-to-go" packages. Not the best, but not the worst.

But ideally, I'd like to make a few "frozen meals" that I can just heat up when I'm not in the mood to prep before.

However, DH is adamantly against frozen dinners - so does anyone know what I can make and freeze from home? Like what will last weeks to a month before being eaten?

I really like cheese, pasta, rice, catfish, tilapia, shrimp, chicken, tuna, etc for lunch. I aim for around 300-350 calories. For veggies, I don't really like onions, bell peppers, or spicy peppers.

So any thoughts as to what I can put together in one container, freeze, and forget until needed? I'd like to avoid any extra prep on it...

Thanks!
