BBQ them til they get a little bit of a crispiness and are fully cooked. Cut them into pieces, use a bit of your favorite kind of sauce to turn them into "boneless wings". Just pick a sauce that isn't terrible and don't use a mess of it.0

I usually do something like a chicken alfredo for nights when I just want to do something quick. I cube the chicken breast and saute it with onions and garlic. I use fat free cream of mushroom soup and 2% milk as the sauce and just add more garlic (you could use garlic powder also). Pour it over pasta. I use Whole Wheat pasta.0

my version of piri piri chicken (worked out at 251cal per portion, 7g carbs, 48g protein, 3g fat, 1g sat fat, 134mg sodium).
For 3 servings I used
3 chicken breasts
and then for the marinade
juice and zest of 1 lemon
2 tbsp mild smoked paprika (for hot paprika use 2 tsps or replace with 2 tsps any hot chili powder)
3tsp dried oregano
1 fresh chilli, finely chopped
3 garlic cloves, crushed.
Mix marinade ingredients. Coat chicken in them. Stick in oven for 25 mins at 180 celcius/350 fahrenheit. If you have time leave it in the fridge to marinate. If not still tastes good.0 -

Pepperjack & spinach stuffed chicken breast:
2 chicken breasts = 4 servings
1/2 cup fresh baby spinach (diced)
1/2 cup fresh pepperjack cheese
Cajun spice (you can buy them pre-made) or use: http://allrecipes.com/recipe/cajun-spice-mix-2/
Butterfly a breast - then pound it out flat.
Stuff spinach and cheese in the middle, close with toothpicks
Roll closed breast in cajun seasoning. (just coating it)
Spray with a little olive oil.
Bake at 375 for 25 minutes.

Pineapple Chicken
3 Chicken Breasts
2 Carrots, sliced
1/2 green bell pepper sliced
5 garlic cloves
1 tbsp canola oil
1 can Pineapple Tidbits
1/2 cup milk
1/2 onion
Cut Chicken into pieces and marinate in pineapple juice. Put oil in frying pan and saute chopped onions and garlic cloves. Toss chicken into frying pan and brown. Add carrots, when cooked add green peppers and pineapple.
