    Here''s 2 of my stand-bys.

    Mango Black Bean salad:
    1 mango (peeled, pitted & diced)
    1 can drained Black beans
    1 serrano pepper, finely chopped (remove seeds and veins if you don't like that much heat)
    1/2 cup chopped onion (rinse after chopping in cold water to remove the bad flavors)
    1/4 cup chopped cilantro
    juice from 1-2 limes

    Let flavors marry for 30 minutes to overnight. Eat on a huge bed of greens of your choice. I usually make it into 2 servings.


    Roasted Eggplant ragu on Spaghetti Squash:

    Bake halved, seeded spaghetti squash in hot oven until soft (about 45 min @375)
    slice eggplant and bake on a cookie sheet about 25-30 minutes (turning once) until soft. (I usually just keep both of these items ready to go in the fridge.)

    In a sauce pan, combine:
    1/2 an onion, chopped
    1-2 cloves of garlic, minced
    2-3 mushrooms, sliced
    with a little olive oil and saute until the onions are softened
    Add 1 cup steamed kale, chopped
    1/2 cup diced roasted eggplant
    Oregano
    Basil
    chilli flakes
    1 c Pasta Sauce (I like Trader Joe's no salt added marinara)

    Let simmer 5-10 minutes to marry the flavors and serve over spaghetti squash strands. SUPER low calorie, super high in fiber and phyto-nutrients. For protein to make this a main dish instead of a side add some beans, veggie or chicken italian sausage, or ground turkey.
