Ah crap now you got me thinkin about it!:ohwell: I would say substitution is our best bet! Margarine, olive oil depending on what your making. My husband and I agree that we are going to be as healthy as possible about it!0

I suggest chicken broth and veg. broth in place of butter in some places. In other places you probably have to just go for it - or try out some new recipes that have no or little butter. Sweet potatoes are great with cinamon and little else, or other spices perhaps. Try new veggies? Or how about some kind of squash bake with loads of spices or herbs instead of butter.0

Wait, were you feeding 25 last year as well? Averaging out to about 2.5T of butter per person for all the food? If so, I think 8 sticks is reasonable.
I thought you were talking about a gathering of 8 or something. I can just imagine everybody tucking into their very own sticks of butter. mmmmmm0 -

I don't use milk or butter in my mashed potatoes... just light sour cream and some seasonings, and they are amazing

Agreed! I make all my holiday food the southern way, butter and gravy. I only control my portions, this allows me to enjoy thanksgiving dishes for a week or more.0 -
Ha! My signature everybody-asks-me-to-bring-it dish (pecan bars) takes two and a half POUNDS of butter. That would be 10 sticks. Disgusting to think about, but it's so freaking good...It's my evil power -- I've never made it without getting at least one marriage proposal.0

Personally, I believe that a high quality, grass fed butter (like Kerrygold) is actually healthy.
But I'm also one of this nutjobs that believes quality grass fed beef and eggs from pastured bug-fed chickens are healthy and processed foods, wheat, soy, sugar, etc are not healthy.0 -

This is a lie. I'm barely tolerating the friends I have.

Wow, I just read through the entire post and all I can say is WOW! We get to have a holiday freak out in August and what a response. First to the margarine people I will say two words to narrow the cause...Smart Balance. I love the stuff, even my Mom who prefers butter commented that she was surprised by the texture and taste.
That being said, it cannot always replace butter because after all it is just olive oil so at some point the great and holy stick of butter must be called upon. I say it is Thanksgiving I think each person should just get their own stick on a saucer and go to town.because after all even if you went crazy crazy crazy it is still hard to have more than 8000 calories on the holidays.
Finally, I will say that some of us have much more important things coming up such as Rosh Hashanah (Jewish New Year) which is followed by Yom Kippur (Fast Day) and then eight days of eating outside in a booth. I have honey bread to consumes sins to lament, and construction projects to start I am just not ready to start thinking about Thanksgiving, except for the 300 or so words I just wrote contemplating Thanksgiving.
Thanksgiving is about giving thanks and in many ways we can be thankful for the overabundance of food which we Americans enjoy. Every year many of us on these forums spend hundreds of days depriving ourselves for greater goals, but for one day we can enjoy the blessing which we have and go MELT SOME BUTTER!!!0 -

I chuckle at worrying about 8 sticks of butter. I use more than that just in my pie crusts. Not to mention the mashed potatoes, dressing, and a bunch of other stuff.
Kerrygold butter is awesome and the French Normandy butter is so badass also. I could just eat them with a spoon. The pie crusts I make with them are heads and tails over the pie crusts made with regular butter
Margarine is not allowed in my house.0 -
We are weird here. We don't do the whole turkey thing. My husband is European and has no nostalgia about it, and the kids hate it.
So several years ago we made it our personal tradition to have beouf bourguignon as our Thanksgiving meal. It's special to us, everyone gets super excited about it, and I get to use my awesome orange Le Creuset pot. Everyone's happy!0 -
Thanksgiving is hands down my favorite holiday. I spend the whole day drinking and cooking and eating. Three of my favorite things to do.0

I'm dreading it too! Thanksgiving is my FAVORITE holiday and the thought of being around all that food and not going back for seconds is too much! LoL! I'll have to fast the whole week before and walk 10 miles to prepare.0
