Chicken sausage kale soup- healthy Zappa Toscana

So I wanted to come up with a healthy verision of Olive Garden's Zappa Toscana. So here it is. And amazing might I add

1. Package of Publix green wise medium Italian chicken sausage.
2. 2 jugs of low sodium llow fat chicken broth. I kinda eye balled it
3. 2 sweet potatoes cubbed
4. 3 hand fills of kale

Cut the sausageoort of the out side skin. Brown chicken sausage in a skillet
Put all other ingredients into pot. Boil
Add sausage to soup. Let simmer until kale is a darker green and potatoes are soft

Recipe says that one cup is 138 calories. It's. Great balance of protein healthy carbs and veggies. I like extra kale in mine. You can also add onion nd celery if you like to taste. No need for any seasonings the chicken sausage does that for you. Enjoy

    Quick question..how long should it be @ a boil..
    Is it just until the veggies are tender?

    What does that mean?

    Lol, I think it means to bump it up to the top in "recent topics" I do it so It'll show up on my profile and I can come back to it later, also so that my MFP friends can see it in their newsfeed. It looks good. I'm not big on soups but I may have to try it.

    I made something very similar yesterday. It really is quite adaptable. I do put minced onion/celery/carrot in mine at the start (cook first to soften), tons of kale, and towards the end put sliced zucchini for some extra veggies. I have also substituted garbanzo beans for sweet potato in the past.
