need a healthy zucchini cake/ muffins recipe
I just made my childhood fav zucchinin cake recipe, then i did the numbers on it and WOW, it's so unhealthy! I was in shock... i made a 9x13 pan and cut into 12 squares and it was a whopping 417 cal, 20 grams of fat and 55 carbs! does anyone have a healthier version that is still good? I tried several recipes last year and i found the muffins to be too heavy or too moist and got mouldy quick...

I don't have a recipe (sorry) but in order to reduce the calories and fat in any baking at my house, I do one (or more) of the following tricks:
1. Cut the amount of oil in half and substitute a fruit puree for the other half. Eg- unsweetened applesauce, mashed bananas etc.
In most recipes I've made, I've been able to sub applesauce for ALL of the oil with no issues whatsoever...but test it out by subbing half and see how it goes.
2. Sugar- Sometimes I will reduce the amount of sugar by 1/3 to 1/2 and use spices or flavorings instead (ie cinnamon, mint, vanilla etc.) Have to be careful with this one though. Some recipes don't lend well to it. You could also use Splenda or Stevia. I don't know anything about using those sweeteners though. I'm a sugar gal, myself.
3. Use skim milk instead of 2% or 3.25%
4. You can also cut down on your salt amounts by half...but ONLY if the recipe doesn't use yeast.
