Amazing & Healthy Banana & Oat Slice

Hi All,

I came across this recipe yesterday and adapted it to my own. I make things healthy so it's not overly sweet (sweet enough for my sweet tooth though) and it is pretty darn tasty!! There are some alternatives that I'm also VERY keen to try but for the moment I thought I'd share how it all started...


Ingredients:
2 cups quick cooking oats (180g)
1 dessert spoon sugar (called for brown but I only had white, can reduce quantity)
1 egg, beaten
1 banana, mashed
1.5C milk of your choice (I used 99.9% fat free soy)
1 tsp vanilla essence


Method:
Place dry ingredients in a bowl and mix together.
In a separate bowl, beat egg and mash banana through it. Add milk and vanilla and mix together. Add wet ingredients to the dry and stir through. Mixture will appear quite runny but will set in oven.
Place in greased or lined pan, I used roughly a 30cm x 15cm pan and the slice came out around 1 cm thick.
Bake in pre-heated 200°C oven for around 25 mins or until golden on top. (I honestly forgot how long it was in for so it may take longer!)
Slice into 12 portions.

Can be used as a base recipe for anything you want really!

Dried Fruits and Bran
Sultana & Apple
Apricot & Coconut
Fruit & Nuts
Apple & Cinnamon
Honey & Almond
Honey & Fruit
Choc Chip & Vanilla
Choc Chip & Fruit
Raspberry & Apple

I'm also going to try and "beef it up" a little to perhaps make a breakfast bar out of it.

The possibilities are endless!!

    I packed some in my son's lunchbox today and he LOVED it!! Great for a mid morning / afternoon snack too!

    Made this last night, so quick, so easy. THANKS!
    I left out the sugar, didn't need it, added some dessicated coconut instead. Great breakfast treat!

    Just made these with my 2 year old, but unfortunately didn't work for us, not sure why. Have put it back in the oven in hope of fixing it LOL
