Good morning! I am in need of some great high protein / low carb recipes. Can anyone help?
An idea for you all -- I take leftover grilled chicken breast, chunk it up into small pieces, sprinkle some shredded cheese on it and microwave it for 60 - 90 seconds. Yummy!

This site has tons of low carb recipes. You can actually choose the amount of carbs and or protein you want and it gives you options. It's based on the glycemic index.0 -

Thanks for the info... I am trying to eat my protein as well. I was told to eat 20 grams of protein for breakfast to kick start my metabolism and to have 5-6 small meals during the day.0

I make tuna salad using cottage cheese instead of miracle whip or mayo. very good and lots of protein.0

One of my favorites for when it is cooler weather is Taco Chili, it's a Weight Watcher's Recipe I believe.
I'm vegetarian so I use Morningstar or Boca brand crumbles, but it's still very high in protein with the beans.
1 pound of lean ground beef or substitute (non-meat)
(fry that up, or heat up for non-meat)
1 onion I use the white in the chili but you can use yellow if you prefer.
(cut it up and saute)
Then in a big pot stir in:
beef
onion
1 can of tomatoes
1 can of mexican style tomatoes
1 can of kidney beans
1 can of chili beans (no meat)
1 packet of taco seasoning
1 packet of ranch dressing (yes the dry dressing)
Heat and enjoy....I put a little cheese or sour cream on top if I have enough room in my calories for the day.
It's one of my very favorite recipes EVER!!! Everyone vegetarian or not loves it too, I've served it to at least 10 different people.0 -

I make turkey smokies (sausages), broccoli, and cheese.
Chicken breasts/tenders, sprayed with olive oil spray, dipped in low sodium taco seasoning, and spread salsa over the top and bake. Soooo yummy! You can top with low fat cheese and sour cream if desired0 -

To cure mashed potato cravings, I mash up steamed cauliflower, add a dash of your preferred dairy, garlic and seasonings to taste. Very yummy side dish.0

When I use to eat meat I would do a lot of chicken salad.
Boiled chicken
Greek yogurt
Little lemon juice
Some diced up apple

Greek yogurt is much higher in protein than regular yogurt. I buy the plain non-fat Greek yogurt. It tastes like and can be used instead of sour cream, turning your garnish into extra protein and as an added bonus, no fat!
I use it all kinds of ways, you can add your own fruit and nuts (which ups the protein too) and other goodies like your protein powder. I add chocolate syrup for a chocolate pudding type desert - totally guilt free chocolate fix and so healthy!0 -
I made some very yummy flaxseed pancakes yesterday.
4 egg whites
3 T ground flaxseed
1 tsp baking powder
1/2 tsp vanilla
1 scoop vanilla whey protein powder
dash of cinnamon
dash of splenda
wisk together and let sit 2 minutes before making like a pancake.
8g fat
10.5g carbs
31.9g protein
6g fiber
I put greek yogurt and berries on mine.. mmm mmm mmm

To expand on your leftover chunks of chicken....
In a non-stick skillet, sautee' a handful of Rainbow Slaw (shredded broccoli), sliced onion, pepper, minced garlic and some celery slices in a tsp of olive oil. Stir till almost tender. Salt/pepper to taste and add your fav. spice.
Make a "well" in the center of the veggie mixture and add 2 TBS of chicken broth. Then lay a wedge of Laughing Cow Light Cheese (regular flavor or one of the new flavors such as Chipotle, or Blue Cheese) in the well and smoosh it till it melts into the chicken broth. Stir through the veggies. Add the chicken. You can also add a handful of fresh spinach leaves and stir until wilted and coated with the sauce.0 -

Rib-eye steak cooked the way you like it
Loads of rocket leaves
Parmisan cheese - cut with potato peeler to get "strip" effect
Topped off with a balsamic vinegar glaze or lemon juice
Cut steak into strips,place on top of rocket, add cheese and glaze

I have a simple spicy chili recipe.
Ground turkey, 2 8oz cans of tomato sauce and a can of dark kidney beans.
Brown the turkey meat, pour in the tomato sauce and kidney beans (drained) then add McCormick's spicy chili mix. The longer you let it simmer the better it tastes. But it is quick and easy if your in a hurry.
This feeds 4-5 people. Each serving size is about 1 cup.
325 cal.
29 carbs.
3 sat. fats
31 protein per serving
Sometimes I add 1/4 cup of shredded fat free cheese (Kraft)

Turkey Chili
1 can Brooks Chili mix (yellow can)
2-3lbs low fat cooked ground turkey
2 cans tomato any kind but low sod
1 can stewed tomato
1 package taco season low sodium
2 bags of Kroger onion and 3 pepper mix
1/2 can mild enchiladas sauce
enough V8 low sodium juice to right thickness
Put into crockpot for 4-6 hours on low
to spice it up you can add the whole can of enchidas sauce or med/hot.0 -
