Had the BEST lo-cal dinner tonight!

Just wanted to share what I made for dinner tonight, b/c it was so darn good....lol It was ground turkey tostadas. I got the recipe from this week's Woman's World magazine.

Here's how to make it:

Per serving, take two 6" corn tortillas, spray lightly with cooking spray and broil for a few minutes till crispy.

Then top with ground turkey (I use the 99% lean organic), lettuce, tomatoes**, low-fat cheese (I used queso fresco, but cheddar would be good too) and a little taco sauce. To season the ground turkey, add some salt, pepper, garlic powder and onion powder to suit your tastes. Serving size is 2 and it's only 350 calories!

I made my own pico de gallo and it was so good on these:

plum tomatoes, onion--diced; lime juice, extra virgin olive oil, cilantro, salt and pepper

    I love these!

    We call them montereys, but same thing.

    We normally fried tortillas and then added all our toppings, but I'm definately gonna give this a try, and especially with 2 I might just be in heaven!

    sounds really delicious, we love tacos. And homemade pica de gallo is a MUST, so good job!
