Healthy and Declicious Banana Chocolate Chip Muffins
These are abolsutely to DIE for! I brought them in to work and they devoured within the 1st 2 hours. And my boyfriend came over and demolished 3 of them in one sitting. I absolutely love these and I actually made them healthier than the original version! So if your looking for something sweet, delicious, and healthy... here it is!
Makes about 16 cupcake size muffins @ 179 calories EACH!
1 3/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 cup vegetable oil
1/4 cup apple sauce
1/2 cup plain yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2 bananas)
3/4 cup milk choc. chocolate chips
Preheat Oven to 350
Combine all dry ingredients in a mixing bowl, and mix for a few seconds. Then add all the wet ingredients, and then the mashed bananas and choc. chips last - you can just fold those in. I usually just let my kitchenaid run for about 20 seconds. Pour mix in muffin or cupcake pan with liners and bake for 20-24 mins ENJOY!
