Red Pepper, Spinach & Feta Quiche

Let me preface this by saying I have never made a quiche without a recipe before. I just sort of threw this together based off of other recipes I have used. I think it needs a little tweeking...probably a little bit more milk and a slightly shorter baking time. It tastes great, but I think it could have been a little fluffier! Please feel free to make comments on what might improve it!
I used a 9" store bought pie crust (the kind you roll out)
1 large red bell pepper, chopped
1 cup baby spinach
4 oz. feta cheese crumbles
5 large eggs
1/2 cup 2% milk
1/4 tsp. salt
1/2 tsp. pepper
1 tsp. extra virgin olive oil
1 Tbsp. minced garlic
1. Preheat oven to 375 degrees. Roll out pie crust into baking dish, put in freezer until everything is ready.
2. Heat olive oil in a pan over medium-high heat. Add garlic and red peppers. Saute until tender & add spinach. Saute for 1 more minute & set aside.
3. Add eggs & milk to a bowl, beat until mixed well. Add the feta cheese and salt & pepper. Mix again.
4. Put vegetable mixture into pie crust. Pour egg mixture over the vegetables. Bake for 35 to 40 minutes or until top is nice golden brown!
Serves 8

To those who mentioned making it without crust, you don't necessarily need to add more egg, but you could do that if you'd like. Just up the amount of milk!0

I think to make it fluffier you would use egg whites instead of whole eggs. But I've only made one quiche recipe ever, and it was an individual serving, so I could be way off, but I did use egg whites instead of whole eggs when I made it and it was fluffy.0
